Foody Friday: Easy Peasy Chocolate Granola Bars

With 6 kids I am always trying to find foods that are quick to make but also made with only healthy whole foods. It’s important to me that they snack on healthy food as it is not only beneficial to their minds and bodies but also their attitudes. I had a friend who had rather a kind of wild kids, she took him off of gluten and she said he was a completely different kid. Isn’t the power of food amazing? Well today’s recipes is one I made everyday when we lived in the states.

I am going to warn you right now that I haven’t made these since leaving the U.S. 4 months ago. So I am going to take a stab at my recipe from memory. (crazy!) 

4 cups of oats ( buy gluten free if you are sensitive)

1/2 cup Cocoa Powder

1/2 cup peanut butter (or other nut butter of your choice)

1/3 cup honey

4-6 Tbs Coconut Oil

Put oats in a food processor and blend until the oats are halved or quartered, NOT until it makes flour. Add cocoa powder. Blend a couple turns. Add peanut butter, honey, coconut oil, and any of the additional ingredients (below). Blend until mixed through. It should stick all together. If its too dry, add more of your butter option. If it’s too bitter, add more honey or cranberries. Put mixture into a 9X13 pan and roll down flat. Cut into squares and serve. Once you have found the flavor and texture you like, you and your kids will love them!

Optional ingredients: cocao nibs, cranberries, nuts, etc
