Foody Friday: Gluten Free Pancakes

I accidentally came across this concoction years ago when the kids wanted pancakes but I wanted to make them a gluten free version.

They are super yummy.  Gluten free.  Whole Foods.  I have a couple variations.

1 cup store bought almond milk

            OR 2 cups homemade almond milk with pulp

1 cup water – ONLY if you used 1 cup store bought almond milk (this is omitted if you used 2 cups homemade almond milk)

2 cups rolled oats

3/4 cup dates (about 8 dates) OR 2 Tbs honey

Blend all ingredients in a Vitamix. If you don’t have a Vitamix soak dates overnight in your 1 cup almond milk. Cook on your griddle.

Optional for extra flavor: cinnamon, almond extract etc…
